Mapo tofu is a famous dish from Sichuan, China. It usually has tofu, meat, and a bright red chili sauce. This version swaps pork for lean ground turkey and adds mushrooms for extra fiber. The sauce stays bold, but we use less oil, so it’s lighter and still tasty. Serve it over brown rice for a complete meal.

Chef’s Tip: The key flavor comes from doubanjiang, a spicy bean paste. You can find it in the Asian aisle or order it online. Sichuan peppercorns add a tingly bite and are also available at many grocery stores. If you don’t own a food processor, finely chop the mushrooms with a knife or grate them.

Turkey and Mushroom Mapo Tofu

Ingredients

  • 8 oz (227 g) cremini mushrooms, cleaned
  • 2 tbsp doubanjiang (spicy bean paste), plus extra if you like
  • 2 tbsp hoisin sauce
  • 1 tbsp low‑sodium soy sauce
  • 2 tsp cornstarch
  • 2 tsp neutral oil (canola or avocado)
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 lb (450 g) ground turkey
  • 1 (14‑oz/397 g) block firm tofu, diced small
  • 3 scallions, thinly sliced
  • Optional: steamed brown rice and crushed Sichuan peppercorns

Directions

  1. Pulse the mushrooms in a food processor until they are very fine. Stop before they turn mushy.
  2. In a small bowl, mix doubanjiang, hoisin, and soy sauce. In another bowl, whisk cornstarch with ½ cup water.
  3. Heat oil in a large skillet until it shimmers. Add garlic and ginger; stir for about 30 seconds until fragrant.
  4. Add ground turkey. Break it up and cook until it looks crumbly, about 2 minutes.
  5. Stir in the chopped mushrooms and cook another 2 minutes until they soften.
  6. Pour the chili sauce mixture over the meat and mushrooms. Cook, stirring, for 1 minute.
  7. Gently fold in the diced tofu.
  8. Add the cornstarch slurry. Simmer, stirring, until the sauce thickens and the turkey reaches 165°F (74°C), about 2 minutes.
  9. Stir in ¾ of the scallions. Taste and add more doubanjiang if you want more heat.
  10. Divide the tofu mixture into four shallow bowls. If you’re using rice, place a bed of brown rice first, then top with the sauce.
  11. Garnish with the remaining scallions and a pinch of crushed Sichuan peppercorns, if desired. Serve right away.
