Swiss Chard Chicken Wraps
Ingredients
- 8 large Swiss chard leaves (about 340 g) with stems
- 1 tablespoon canola oil
- 1½ cups finely chopped zucchini (≈176 g)
- 1⅓ cups chopped shiitake mushrooms (≈85 g)
- 4 garlic cloves, minced
- 1 lb ground chicken (≈454 g)
- ½ cup chopped water chestnuts (≈75 g)
- 1½ tablespoons oyster sauce (≈37 g)
Directions
- Trim the thick stems from the chard leaves. Slice the stems thinly and set them aside. Place the leaves on a microwave‑safe plate, cover with a damp paper towel, and microwave on high for about 1 minute, just until they start to soften. Let them cool.
- Heat the oil in a large non‑stick skillet over medium‑high heat. Add the sliced chard stems, zucchini, mushrooms, and garlic. Stir‑fry for roughly 3 minutes.
- Create a little well in the center of the pan and add the ground chicken. Cook, breaking it up with a spoon, for about 2 minutes.
- Mix the chicken with the vegetables and keep cooking, stirring often, until the chicken is fully done (4‑5 minutes).
- Stir in the water chestnuts and oyster sauce. Cook for another 30‑60 seconds, letting the sauce coat everything.
- Place about ½ cup of the mixture onto each chard leaf and roll it up like a small wrap.
