No‑Bake Date & Oat Bars
Ingredients
- 1 cup (160 g) chopped dates
- 1 cup (80 g) quick‑cook oats, plus extra for coating
- 1 tablespoon pumpkin seeds
- 2 tablespoons sliced almonds
- 2 tablespoons peanut butter
- ½ teaspoon ground cinnamon
Directions
- Put the chopped dates in a food processor. Pulse until they become a sticky paste (about 20‑30 short bursts).
- Transfer the date paste to a large bowl. Stir in the oats, pumpkin seeds, sliced almonds, peanut butter, and cinnamon until everything is evenly mixed.
- Lay a handful of extra oats on a clean work surface. Place the mixture on top, flip it, and sprinkle the remaining oats on the other side.
- Using a rolling pin, flatten the slab to about half an inch thick. Cut it into four equal bars (or any shape you like).
- Put the bars in the refrigerator for at least 30 minutes, or until firm. Then enjoy!
