Chocolate Chip Pumpkin Bread
Ingredients
- 2/3 cup white sugar
- 1 cup canned pumpkin puree
- 1/4 cup canola oil
- 3 tbsp water
- 1 large egg
- 1 1/4 cups all‑purpose flour
- 2 tsp pumpkin pie spice (or 1 tsp cinnamon and ½ tsp nutmeg)
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup semisweet chocolate chips
Directions
- Preheat the oven to 350°F (175°C). Grease an 8‑by‑4‑inch loaf pan.
- In a big bowl, mix sugar, pumpkin, oil, water, and egg until smooth.
- Add flour, spice mix, baking soda, and salt. Stir just until the flour disappears.
- Fold in the chocolate chips.
- Pour the batter into the pan and bake 50–60 minutes. A knife in the center should come out clean.
- Let the bread cool, then cut into six pieces.
