Coconut Apple Muesli

Muesli is a cold breakfast made from oats, fruit, and a liquid such as milk or yogurt. You can eat it right away, or let it sit in the fridge overnight. While it chills, the oats soften and turn into a creamy, satisfying meal.

Coconut‑Green Apple Muesli

Ingredients

  • 1½ cups (368 g) plain non‑fat Greek yogurt
  • ½ cup (122 g) unsweetened coconut milk
  • ¼ cup (62 g) fresh orange juice
  • 2 tablespoons light honey or maple syrup
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 cup (80 g) rolled oats
  • ½ cup (46 g) sliced almonds, roasted, unsalted
  • ½ cup (59 g) pepitas (pumpkin seeds), roasted, unsalted
  • ½ cup (21 g) shredded unsweetened coconut
  • 1 large Granny Smith apple, cored and shredded

Optional toppings

  • Extra cinnamon
  • Honey or maple syrup
  • Toasted shredded coconut
  • Fresh shredded apple
  • Toasted nuts such as almonds, hazelnuts, or walnuts

Directions

In a medium bowl, whisk together the yogurt, coconut milk, orange juice, honey, cinnamon, and salt. Add the oats, almonds, pepitas, shredded coconut, and apple. Stir until everything is evenly mixed.

Divide the mixture into four 1‑cup jars with tight lids. Chill in the refrigerator for at least one hour, or overnight for the best texture.

When you’re ready to eat, take a jar out, add any toppings you like, and enjoy straight from the jar.
