Grilled Chicken with Peach Salsa
Ingredients
- 2 tsp canola oil
- 4 6‑oz (170 g) boneless, skinless chicken breasts
- ½ tsp kosher salt, split
- ½ tsp black pepper, split
- 1 ⅓ cups (206 g) chopped peaches
- ¼ cup (25 g) sliced green onions
- 1 medium jalapeño, seeded and minced
- 1 tsp lime zest
- 2 tsp fresh lime juice
- 2 tbsp chopped fresh cilantro
Directions
Heat an outdoor grill to medium‑high and brush the grates with a little oil.
Cover the chicken with plastic wrap and pound it to an even thickness. Sprinkle with ¼ tsp salt and ¼ tsp pepper.
Grill the chicken 5–7 minutes per side, until grill marks appear and the inside reaches 165 °F (74 °C). Let it rest for 5 minutes.
While the chicken cooks, mix the peaches, green onions, jalapeño, lime juice, lime zest, cilantro, and the remaining salt and pepper in a bowl.
Spoon the peach salsa over each chicken breast and serve.
