Frozen Raspberry Yogurt Granola Bites

Ingredients

  • 1 cup (110 g) low‑sugar granola
  • 1 tbsp melted coconut oil
  • 1½ cups (365 g) plain non‑fat Greek yogurt
  • 1½ cups (225 g) fresh raspberries, split
  • 2 tbsp honey
  • ½ tsp vanilla extract

Directions

  1. Line a 12‑cup muffin tray with paper liners.
  2. Mix granola and coconut oil until coated. Spoon the mixture into each cup and press down gently. Freeze for 5–10 minutes.
  3. Blend yogurt, 1 cup of raspberries, honey, and vanilla until smooth.
  4. Pour the yogurt blend over the frozen granola layers.
  5. Scatter the remaining raspberries on top and press lightly so they sit in the yogurt.
  6. Freeze the tray for at least 4 hours, until firm.
  7. Store bites in an airtight container or zip‑lock bag. Let sit at room temperature for 5 minutes before eating.
