Frozen Raspberry Yogurt Granola Bites
Ingredients
- 1 cup (110 g) low‑sugar granola
- 1 tbsp melted coconut oil
- 1½ cups (365 g) plain non‑fat Greek yogurt
- 1½ cups (225 g) fresh raspberries, split
- 2 tbsp honey
- ½ tsp vanilla extract
Directions
- Line a 12‑cup muffin tray with paper liners.
- Mix granola and coconut oil until coated. Spoon the mixture into each cup and press down gently. Freeze for 5–10 minutes.
- Blend yogurt, 1 cup of raspberries, honey, and vanilla until smooth.
- Pour the yogurt blend over the frozen granola layers.
- Scatter the remaining raspberries on top and press lightly so they sit in the yogurt.
- Freeze the tray for at least 4 hours, until firm.
- Store bites in an airtight container or zip‑lock bag. Let sit at room temperature for 5 minutes before eating.
