Air Fryer Turkey Egg Rolls
What you need
- 1 tbsp toasted sesame oil
- 2 garlic cloves, minced
- 2 cups shredded green cabbage
- 1 small carrot, shredded
- ¼ cup chopped green onions
- 8 oz ground turkey (93% lean)
- 1 tbsp reduced‑sodium soy sauce
- ¼ tsp black or white pepper
- 8 egg‑roll wrappers (about 24 g each)

How to cook
Heat a medium non‑stick pan over medium‑high heat. Add the sesame oil and swirl. Toss in the garlic and stir for about 30 seconds. Add the cabbage and carrot; cook for 2 minutes. Stir in the green onions and turkey. Cook, stirring often, until the turkey reaches 165°F (about 3‑4 minutes). Remove the pan, then mix in soy sauce and pepper.
Lay an egg‑roll wrapper on a clean surface like a diamond. Wet the edges with a little water. Spoon about ¼ cup of the meat mix onto the center. Fold the left and right corners in, then roll tightly. Repeat for the rest.
Preheat the air fryer to 400°F (200°C) if needed. Lightly spray the basket. Place four rolls in a single layer, spray the tops, and cook for 7‑8 minutes, turning halfway. When they turn golden and crisp, remove and repeat with the remaining rolls. Serve right away.
