Mushrooms, Brussels Sprouts & Tofu Grain Bowls
Ingredients
- 1 (14‑oz.) package extra‑firm tofu
- 2 tbsp olive oil
- 2 tbsp white miso
- 1 tbsp water
- ¼ tsp kosher salt
- 1 clove garlic, grated
- 1 lb Brussels sprouts, trimmed and halved
- 4 oz shiitake mushrooms, stems removed, caps thinly sliced
- 1 tbsp toasted sesame oil
- 2 cups cooked farro
- 4 tsp Sriracha
Directions
1. Drain the tofu and slice it into half‑inch pieces. Press the slices between paper towels to soak up extra water while the oven heats.
2. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
3. In a small bowl, whisk olive oil, miso, water, garlic, and salt until smooth.
4. Toss the Brussels sprouts with 1 tbsp of the miso mix. Spread them on one side of the sheet.
5. Toss the mushrooms with 1½ tsp of the miso mix. Spread them on a separate area of the sheet.
6. Cut the pressed tofu into bite‑size cubes. Toss with the remaining miso mix and place on the last part of the sheet.
7. Roast for 20 minutes. Remove the mushrooms, stir the sprouts and tofu, then roast another 5 minutes until tender and lightly browned.
8. While the vegetables finish, heat sesame oil in a non‑stick skillet over medium‑high heat. Add the farro and stir for about 2 minutes until warm and a little crisp.
9. Divide the farro into four bowls. Top each bowl with the roasted Brussels sprouts, tofu, and mushrooms. Drizzle 1 tsp Sriracha over each serving and serve right away.
